Light Snack or Lunch – Spicy Hummus Flatbread

Ya know I was really getting excited about the cool weather moving in. I was all prepared digging into my Fall dishes I love and cherish, making apple butter, pumpkin pies, and than WHAM! A hot front moves in and we are right back to summer again. With the temperatures rising in LA to 107 degree’s I had to regroup and find something to make on the lighter side.

This is a HEALTHY and EASY 4-ingredient recipe.

Spicy Hummus  (Trader Joes)

Sliced Avocado

Diced Tomato

Hand Rolled Tortilla’s (Trader Joe’s next to the regular) or Flat Bread.

Heat up the Tortilla or Flat Bread in the oven on 350 for about 3-5 minutes. You want it to get just a little firm to hold the ingredients. Next spread on a nice layer of the smooth and creamy hummus. This is SO amazing! I was never a huge hummus fan until I discovered the really creamy ones that taste more like a sauce when mixed with other ingredients. This is the perfect blend of spicy! Not to hot 🙂

Add your slices of avocado and diced tomatoes. Sprinkle on some salt and crack some pepper. With a pizza cutter slice into quarters. YUMMY!!!

Note: Each individual flatbread only requires half a tomato and half an avocado so this recipe could be a great snack or lunch for two.

This is perfect for a vegetarian and believe it or not it’s FILLING. Just one of these fills me up for lunch. Not only does it hit all your taste buds but it’s figure friendly too 😉
