Sweet BBQ Pork Pulled Taco’s w/ an Apple Slaw…

I went to school in the south (Radford baby) and pulled pork sandwiches were served everywhere. The first time I tried one of these I fell in love! What makes this sandwich SO amazing is the creamy coleslaw served on top, but I’m going to change it up a bit ’cause I’m turning this classic southern sandwich into TACO’s. That’s right, and I am also going to jazz it up with an apple coleslaw.

Sweet BBQ Pulled Pork

  • 1.5 pounds pork loin
  • 2 tablespoons olive oil
  • 1/3 cup molasses
  • 1/3 cup catsup
  • 1/3 cup apple butter
  • 1 tspn. apple cider vinegar
  • 1 tspn. spicy brown mustard
  • 1 teaspoon worstershire sauce
  • 5 cloves garlic chopped

In a pot on med. high, drizzle in the olive oil. Season your tenderloin with salt & pepper. You may need to cut it in half to fit it in the pot. Sear the outside of the tenderloin, rotating it ever few minutes. Once the pork is nice and browned turn down the heat to low. Add in the remaining ingredients and spread over the loin coating it. Put on a lid and cook for 1 hour, basting it occasionally. Using tongs in one hand a fork in another begin shredding the meat. It may be a little tough to shred at first so you may want to shred a little and then come back to it.

The meat will begin to break down the more you shred.

After it’s shredded serve.

The apple butter in the pork really compliments the apple in the slaw. I just love this combo. The idea for adding the apple came from a reminiscent dish I had growing up – pork chops and apple sauce… This tastes much better though. 😉

Apple Cole Slaw

  • 2 cups cabbage
  • 1 apple (chopped)
  • 1/2 cup light mayo
  • 1/2 lemon
  • 1 teaspoon cider vinegar
  • salt & pepper

Combine the ingredients and place in the fridge allowing the flavors to set in.

Place the shredded meat into the taco and top with the APPLE slaw. I drizzled on some of my cilantro lime yogurt sauce (see recipe). Cilantro and pulled pork are friends, wink, wink…

This dish is perfect for leftovers serving over a bed of parmesan polenta. The sweetness of the pork really compliments the polenta, heaven 😉

This is the perfect dish that is healthy, tasty, and affordable.
