Sweet Potato Pancakes served with a Fresh Cucumber Feta Salad – Bon Appetite!

These are super fun to make and I am already craving them again…I love the combo of the sweet potato pancake balancing out the feta salad. It’s all about making your taste buds go wild!

You always want to combine the sweet with the savory. This is perfect as a light lunch and well if you were in Paris you would be accompanying this with a glass of red wine dining al fresco. Why not? 😉

Sweet Potato Pancakes

  • 1 sweet potato (cleaned and grate)
  • 1 green zucchini (grate)
  • 1 carrot (peel and grate)
  • 1 egg
  • fresh grated nutmeg
  • 1/8 cup flour
  • sprinkle of onion powder
  • salt
  • canola oil
  • honey

This is another dish where your food processor comes in handy. 🙂 Let it shred your veggies!

Combine the veggies with the egg, nutmeg, onion powder, and flour. The mixture will thicken up a bit after you add the flour.

Heat the oil in a fry pan. Make small patties with your hands and carefully drop in. Once the you see bits of the potato browning on the bottom, flip over.

Sprinkle with salt and set aside on a piece of paper towel. That was easy. 🙂

Cucumber Salad

  • 1 cucumber (diced)
  • feta cheese
  • 1 tomato (diced)
  • 1/2 lemon (squeezed)

Combine the ingredients and sprinkle on some salt and pepper.

Drizzle a swirl of honey over the pancake and serve with the salad.
