Amy’s Whole Wheat Bread Pudding w/Apples!

Now this just isn’t any bread pudding, it’s made with whole wheat bread and soy milk – how cutting edge is that? Soy milk I have found has more flavor to it and I purchase the vanilla one for my coffee in the morning – perfect! šŸ™‚

Since I’m Italian I love bread, so to make some minor substitutions IĀ feel a little bitĀ more health conscious. šŸ˜‰ I cut back on the sugar as well and surprisingly this dish is very light!

If you are vegan I’m sure you can use an egg substitute and perhaps maple syrup instead of the brown sugar.

Using a loaf pan cuts downĀ on theĀ portionsĀ and I’ve added more apple to the recipe to replace some of the bread.

If you’ve never made bread pudding before don’t worry because I HAVE and this is a fool-proof recipe that is SO simpleĀ you’d be silly not to tryĀ it.Ā šŸ™‚Ā 

Amy’s Apple Bread Pudding

  • 1 tablespoon butter
  • 5 slices of whole wheat bread
  • 1 cup vanilla soy milk
  • 1 egg
  • 1 apple chopped
  • 1-1/2 tablespoons brown sugar
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon pumpkin pie seasoning
  • 1/8 teaspoon freshly grated nutmeg

Take your butter and grease the bottom and sides of a loaf pan. Set the remaining butter aside for later. Preheat your oven to 350 degrees.

Slice your bread into cubes. Chop your apples leaving the skin on. Place both the bread and the apples into the loaf pan.

In a liquid measuring cup, pour a cup of soy milk. To that you’re going to want toĀ add the brown sugar, egg, pumpkin pie seasoning, nutmeg, and vanilla. Whisk together.

Pour the soy mixture over the bread and apples gently patting down with the back side of your hand to form the shape of a loaf.

Cut the remaining tablespoon of butter and place dollops along the top of loaf.

Put into the preheated oven forĀ 40-45 min. When it’s ready the top should be a lovely golden brown color.

Don’t forget the sauce…

Amy’s Special Sauce

  • 1/4 cup soy milk
  • 1/2 tablespoon butter
  • 1/4 teaspoon white sugar
  • 1/4 teaspoon vanilla extract
  • Nutmeg (freshly grated)

HeatĀ all of the ingredientsĀ in a small fry pan. Bring to a simmer and pour over the bread pudding.

Look at those big chunks of apples and that sauce…
