Easy, Fresh, Guacamole!

Cinco De Mayo is just around the corner, so here’s an EASY recipe for some fresh homemade guacamole. Now all you’ll need are some chips and beer! 😉

There’s only 2 main ingredients in this Guac:  Avocado and Lime…The key is making it right before you eat it so it’s nice and fresh!

Amy’s Fresh Guacamole

  • 3 ripe avocados
  • 1 fresh lime (squeezed)
  • 1/4 teaspoon salt
  • Fresh cracked pepper

It’s best to just plan ahead and buy some unripened avocados 3-4 days in advanced. That’s usually what you will find in the stores anyways. When they are unripe they are hard. If you can find the some ripe ones the day of then that’s great too…

To tell if an avocado is ripe, press down with your thumb and it should be soft, leaving a slight imprint. If it’s mushy and brown – it’s no good.

If you purchase them in advanced leave them out in a bowl for a few days until they soften. If you put them in your fridge they won’t ripen. On the flip side if they ripen too soon, the fridge will slow down the process. 😉

The easiest way to prepare an avocado is to cut in half long ways and then pull apart. Your gonna want to make the guacamole right before you eat it so it stays fresh.

With a knife slice into the pit so it sticks. Then turn the knife and pull the pit out.

With a spoon scoop out the flesh from both sides. Gently mash in a bowl. Squeeze in the lime juice. Add a dash of salt and crack some fresh black pepper.

Mix together and serve with some lime tortilla chips. That was easy 🙂 If you want to get fancy you could always adds some fresh chopped cilantro.

I like to leave fresh chunks of avocado in mine. So GOOD! 🙂
