Spinach Strawberry Salad with Caramelized Onions

It’s amazing what you can do with 3 simple ingredients: Onion, Strawberries, and Spinach!

I love strawberries and I especially love this salad! The key to caramelized onions is time. They need about 15-20 minutes to cook down, but the pot does all the work. 🙂

Strawberry Spinach Salad (2-3 servings)

  • Strawberries
  • Bag of Spinach leaves
  • 1 large sweet onion
  • 1/2 teaspoon sugar
  • fresh parmesan for garnish
  • 1-1/2 teaspoons balsamic vinegar
  • 1/4 cup olive oil
  • Trader Joes garlic naan flat bread (optional)
  • 2 tablespoons butter
  • Freshly shaved Parmesan

First, slice down your onion. In a pot heat up a tablespoon of butter. Add in the onion on medium heat. Sprinkle a pinch of salt and a 1/2 teaspoon of sugar over top – stir.

Keep a close watch on these so they don’t burn. Cook for about 10 minutes stirring every couple of minutes – than turn the heat down to medium low for another 5-10 minutes until they are a beautiful golden brown.

Now while those are caramelizing and smelling AMAZING slice down your strawberries long ways and prepare a bed of spinach leaves on each plate.

For the vinaigrette, vigorously whisk the olive oil and balsamic together until it combines.

I love the garlic naan bread from Trader Joes. It’s in the frozen food section near the Indian food. All you have to do is pop 1 in the oven for each person at 350 degrees  for about 5-7 minutes – then butter. 🙂

Once the onions are done place some over the bed of spinach. Add the sliced strawberries and spoon over the vinaigrette. (You may have to whisk right before). Using a peeler create ribbons with the parmesan cheese.

Slice the buttered bread into 4 pieces and place around the outside of the salad.

Then Serve!  The sweet onions pair wonderfully with the fresh bites of strawberry. I hope you enjoy this special Spring salad – perfect for lunch or as a light dinner. 😉
