Now this is my kind of breakfast – simple with all the flavors I love. I like fresh veggies with my eggs and I love bacon, especially sweet bacon with brown sugar on top. 🙂
If you are looking for a fun breakfast with a little bit of gourmet flare – this is your breakfast of champions!
Spinach Omelette (Servings: 1)
- 2 eggs (whisked)
- 1 cup of fresh spinach
- salt and pepper
- onion powder
- garlic powder
- grated cheddar cheese
In a fry pan melt some butter. Sprinkle some onion powder into your whisked eggs. On medium heat pour in your eggs moving the edges from side to side with a spatula. When the top is mostly cooked add in your spinach. Season with salt, pepper, and a sprinkle of garlic powder. Fold the egg over the spinach and within seconds it will begin to wilt down. Grate som fresh cheddar cheese over top.
For the brown sugar bacon. Cook your bacon on medium heat. Right before it’d done sprinkle some brown sugar over top with your fingers. Flip and do the same with the other side.
Remove and place on a plate lined with paper towels. That was easy. 🙂
I served raisin cinnamon english muffins with mine. Raisin cinnamon bread and sweet bacon are friends. You could even drizzle some maple syrup over top of the bacon while it’s still in the pan for some extra goodness.
This dish is sweet — savory, and you still get your helping of veggies. 🙂
