Now that is what I’m talkin about… This orzo has it all!! It is absolutely amazing with a cheddar cheese sauce, crispy bites of bacon, spinach, and fresh bursts of tomato with each bite.
I am in love with this dish!!
Amy’s Cheesy Orzo (Servings 2-3)
- 1 cup orzo pasta (cooked)
- 1 cup of sharp cheddar (shredded)
- 1/2 cup of swiss (shredded)
- 1/2 cup of heavy whipping cream
- 2-3 pieces of thick cut bacon (chopped)
- 1/8 cup finely diced onion
- 1/8 cup white wine
- 1 cup tomato diced
- 1 cup of spinach leaves
- 1 tspn salt
- cracked black pepper
- fresh parmesan to grate over top
In a pot bring the whipping cream to a slow boil (aprox. 8-10 min). Add in the cheese and stir.
While that is melting down we can begin the bacon. In a small fry pan add your small bacon pieces to a dry pan. Once it is cooked through drain the fat and add in the onion. Saute until both are nice and crispy.
Continue stirring your cheese sauce…
Add in the bacon/onion mixture along with the orzo.
Pour in the white wine and stir. Add the spinach and allow to wilt down.
Gently stir in half of the tomato leaving the remaining for garnish. Then add your salt and fresh cracked pepper.
Top with fresh tomato and parmesan.
