It’s time to make a Hearty meal with some marinated grilled chicken served in a Rosemary wine sauce…
For the ingredients:
- red onion
- fresh rosemary
- 2 cloves garlic
- red wine
- plain tomato sauce
- olive oil
- garlic powder
- onion powder
- parmesan cheese (fresh)
You will want to marinate your chicken first. I just used a 3:1 ratio olive oil to red wine vinegar. I added in a few rosemary sprigs along with a couple of shakes of garlic and onion powder. Place in a bag, then set in fridge for 3-4 hours.
Chop up a 1/4 cup of onion, 2-4 carrots, and mince your garlic. In a pot heat up about a tablespoon of olive oil. Add in the onion and carrot until they begin to sweat (soften) 5-7 min. on medium heat. Sprinkle with salt. Next, toss in the garlic for about another couple of minutes.
Add in a couple of sprigs of fresh rosemary. Then pour in the red wine – just enough to cover the vegetables. Simmer for about 5 min. then mix in the jar of sauce. Add about 1/4 cup of water to the bottom of the sauce jar and pour in. Stir and simmer on low for 40 min. or more.
In the meantime, boil your penne and drain. Set aside. Begin grilling up your chicken. Let the cooked chicken sit for a couple of minutes before slicing to keep in the juices. 🙂
Once the sauce is done and smelling amazing, remove the rosemary sprigs. Stir in the pasta and slices of chicken, then finish with some freshly grated parmesan cheese.
