Fresh pasta on the fly…A 5 minute homemade tomato sauce served over shell pasta – Mangia!

I always try to make my tomato sauces homemade, but sometimes you just don’t  have the time. This recipe is perfect for a quick pasta sauce on the fly.

The sauce is made from diced tomatoes which gives a freshness to the dish. With only 4 main ingredients this is your homemade sauce on the go! 🙂

Pasta on the fly (servings: 2-3) Sauce Time: 5 min.

  • 3 cups medium shell pasta (Barilla)
  • 1 can diced tomatoes (14.5 oz)
  • 3-4 cloves garlic (finely chopped)
  • 1/2 cup red (finely chopped)
  • fresh parmesan block (finely grated)
  • 1/8 tspn. garlic powder
  • 1/4 tspn. salt
  • fresh cracked black pepper

To begin, boil your shell pasta until al dente. Don’t forget to salt the water. 😉

In a sauce pan, drizzle a tablespoon of olive oil. Add in the garlic and onion. Saute for 3-4 minutes on medium heat.

Once the garlic is fragrant add in the cooked pasta. Drizzle some olive oil over top. Next add in the can of diced tomatoes. Season with salt, pepper, and garlic powder. Let simmer for 5 minutes allowing the pasta to absorb the tomatoes.

Top with lots of fresh parmesan. 🙂  That was EASY!

You can add oregano, fresh basil, or red pepper flakes for a kick – make it your own. 🙂

I love the chunks of tomato in this sauce, so yummy and fresh!!
