I love a good California style omelette so I decided to re-create my own using diced tomatoes, havarti cheese, and grilled onion, topped with slices of ripened avocado. The fresh ingredients make this omelette healthy and quite simply, delicious. 🙂 This is the perfect start to your day!
Amy’s California Omelette
- 2 eggs
- onion powder
- 1-2 slice havarti cheese
- 1/2 tomato diced
- 1/2 avocado sliced
- 1/8 chopped onion
- 1 tablespoon butter
- salt & pepper
Whisk your eggs with a pinch of onion powder. In a small fry pan heat up the butter. Add in the chopped onion. Cook until softened 3-4 min. then pour in the egg. Using a wooden spoon move the cooked edges toward the middle and rotate the egg mixture to cover the pan. Once the egg is almost cooked through sprinkle on some salt & fresh cracked black pepper.
Layer on the cheese…
then add the diced tomatoes.
Flip the one side over to the other. Cook for another minute or so…
Slice half of a ripened avocado and fan out over top.
Grate some fresh parmesan cheese (or a spanish cheese) over top. Sprinkle some fleur de sel (salt) and black pepper over the avocado slices.
Now that’s a California omelette!!
