This salad is sweet and delicious. I just love these champagne mangos!! They are baby mangos also known as ataulfo mango from Mexico. Living in California I definitely feel lucky having access to all of these amazing fruits right in my neighborhood.
Here are the main ingredients – Avocado, Mango, and Tomato. 🙂 Look at the amazing color of the mango, it has a golden orange color. The sweetnesss of this fruit works wonders with the buttery avocado and fresh bursts of tomato.
For me it’s about enjoying different flavors together and that is what this simple salad is all about.
First slice up your avocado. Gently sprinkle with salt. There is something magical salt does to an avocado that enhances it’s flavor. Dice up a tomato and mango placing in a bowl. Season the entire dish with salt, pepper, and garlic powder. The ratio’s for the fruit are 1:1 so depending on the portion size double or triple the ingredients.
Drizzle a tiny, tiny, bit of olive oil, and a couple of light splashes of red wine vinegar. Gently stir and serve! 🙂
