Sometimes you need a breakfast on the run that packs a punch. This meal is not only healthy, but carb-free for those of you who are watching your diet. There is nothing easier than cooking everything together in the same pan.
If you don’t have an iron skillet, follow me and use your small fry pan. Once the eggs are cooked just slide it onto your plate. 🙂
Easy Egg Skillet with Spinach
- 2 eggs
- chopped onion
- spinach leaves
- chopped tomato (garnish)
- hot sauce
- salt & pepper
- onion powder
- olive oil
In a fry pan drizzle in some olive oil. Saute the onion until golden brown. Add a few handfuls of spinach leaves and drizzle some olive oil on top allowing them to shrink down. Just crack two eggs directly over top. I know this may seem weird at first, but it works!.
Season the entire skillet with salt, pepper, and onion powder. Place a lid over top of the pan and cook to your liking on low 7-10 minutes.
Tip: if you don’t have a lid for your pan place a piece of tin foil over top.
Now look at that!! Simple, healthy eggs that don’t miss a beat.
