During the summer I want meals that are simple and fresh. This is an easy salad with grilled tilapia and a mango peach salsa.
Tilapia is my go-to fish. It’s light, affordable, and readily available.Two pieces of tilapia (1/2 lb.) only cost me $2.50 – Bargain! 🙂
Tilapia w/Mango, Peach Salsa
- Spring mix or spinach salad greens
- diced tomato
- 1/2 lb. tilapia (2 pieces)
- olive oil
- red wine vinegar
- salt, pepper, garlic powder
The sweet mango peach salsa is the perfect compliment for this salad and a great way to use some of that summer fruit. Slice the mango longways alongside the pit. Take each half and score with a knife into cubes.
Using a spoon, scoop out the flesh and your mango is chopped. 😉
For the peach cut into wedges then peel the skin. Dice into small pieces.
In a bowl combine the mango, peach, and a little bit of fresh chopped cilantro. Drizzle a 1/4 teaspoon of olive oil over top. Stir and set aside.
Next, season your mixed greens and diced tomato with olive oil, red wine vinegar, salt, pepper, and garlic powder. Prepare a bed of the greens on a plate.
Lastly, grill your tilapia. If you are using an outdoor grill make sure it is brushed with olive oil. If the tilapia is really thin, cook on some foil.
If you don’t have a grill just use a fry pan. Be sure to coat the entire pan with a thin layer of olive oil or else it will stick. Season the fish with salt and pepper. Cook for 3-5 minutes on each side.
Place the tilapia over the bed of greens, then spoon over the mango peach salsa. Season with salt and fresh cracked pepper.
