Amy’s Drunken Rice Pudding…oh yeah!

Drunken just means cooked with alcohol. The SECRET ingredient to this dessert is rum raisin ice cream! A simple step that combines the raisins and alcohol together. Perfect. I mean, who says rice pudding has to be boring? 🙂

You can purchase one of those bite size containers from Haagen–Dazs for only$1.00. This is an easy way to make your rice pudding instantly gourmet…Shhh…don’t tell. 😉

Amy’s Drunken Rice Pudding

  • 1 cup of long grain rice
  • 2 cups of water
  • 1 cup of soy milk (can substitute any milk)
  • 1/3 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon pumpkin pie seasoning
  • 1/8 teaspoon fresh nutmeg
  • 1 bite size carton rum raisin ice cream (3.7 oz)

First boil the water. Then add the rice and cook for 20 minutes on low stirring on occasion. When the rice is ready pour in the sugar and milk.

Add in the pumpkin pie seasoning and fresh nutmeg.

Stir together and cook on low with a cover until the milk has absorbed into the rice. (15-20 min.)

Add in the rum raisin ice cream and let it slowly melt in.

This drunken rice pudding glistens with love.
