Amy’s Vodka Cream Sauce…

What’s better than bread and sauce? Especially a vodka cream sauce. Penne Alla Vodka is BIG where I come from in Northern New Jersey and is a favorite at Italian restaurants.

So today I’ve come up with a killer recipe for a vodka cream sauce and a simple way to sop it up with these AMAZING toasts that combine some of my favorite elements of an Italian meal – bread, sauce, and salad. What more could you ask for? 😉

Let’s begin!

Amy’s Vodka Sauce (30-40 min.)

  • 4 cloves garlic smashed
  • 1 tablespoon olive oil
  • 1/8 cup minced onion
  • 29 oz can plain tomato sauce
  • 1/2 cup vodka
  • 3/4 heavy cream
  • 1/8 cup chopped fresh basil
  • 3 teaspoons sugar
  • 1 tablespoon butter
  • 1/8 teaspoon nutmeg

In a large pot drizzle in the olive oil. Add in the onion and smashed whole garlic cloves. Once the the onion begin turning translucent pour in the can of tomato sauce. Bring to a boil.

Add in the vodka and let the alcohol burn off cooking on medium heat for 10-15 minutes. After this step I spoon out the garlic cloves.

Next, stir in the cream, sugar, basil, and butter. The butter adds a glossy sheen. Add in a pinch or two of salt and grate some fresh nutmeg.

Cover for another 10-15 minutes.

Onto the toasts. Slice down some fresh Italian bread. Toast and butter. Toss together salad greens in some olive oil and red wine vinegar. Season with onion powder, garlic powder, and hint of salt and pepper. Mix and place on top of the toasts.

Pour the rich, silky, cream sauce over top!! Finish with some fresh parmesan.

Oh and for the men who love their meat, serve with some good quality prosciutto or hard salami. Enjoy with a nice glass of red wine.
