Pumpkin Bread Pudding – Happy Fall!

I love bread pudding and now that I have discovered this pre-seasoned pumpkin pie mix, I can make all kinds of pumpkin desserts effortlessly. So cool!

Pumpkin Bread Pudding

  • 1-3/4 cups half-n-half
  • 1-3/4 cups prepared pumpkin pie mix
  • 1/8 brown sugar
  • fresh grated nutmeg
  • 2 teaspoons vanilla extract
  • 2 eggs
  • bread cubed
  • 2-3 tablespoons butter
  • powdered sugar (topping)

Grease a casserole dish with butter. Fill the dish to the rim with bread cubes. You don’t have to pack it in. In a bowl combine the remaining ingredients until they turn a lovely pumpkin color.

Pour over the bread cubes and using a spatula or your hands gently toss in the liquid mixture until it is all covered.

Top with dollops of butter and place in a preheated 350 degree oven for 45 minutes or until a toothpick inserted comes out clean.

Serve with whip cream or vanilla ice cream. Sprinkle some powdered sugar on top!
