Day 2 – Mango infused Squash served over a Tangy Dill Cucumber Salad…

This cucumber squash salad is like nothing you have ever tasted before! The butternut squash is actually infused with mango juice. The mango juice brightens the flavor of the squash and is served on top of a cucumber dill salad. The sweetness of the squash compliments the tangy dill dressing perfectly. 🙂

Cucumber Salad w/Mango Squash

  • 2 tablespoons fresh mango juice (Naked Brand)
  • 2 cucumbers sliced
  • 1 shallot sliced
  • 2 cups diced squash (peeled)
  • 2 tablespoon butter

Dill Dressing

  • 1/2 cup mayo
  • 1/4 cup sour cream
  • 1-1/2 tablespoon apple cider vinegar
  • 1/2 teaspoon sugar
  • 1/2 teaspoon dry dill

Combine the dressing and pour it over the sliced cucumbers and shallots. In a pan cook the squash in a tablespoon of butter. Once the squash is cooked remove from the pan and place in a bowl. Add 2 tablespoons of fresh mango juice to the squash and carefully toss. On a plate create a layer of the cucumber and shallots in the dill dressing. Spoon the sweetened mango squash over top. This is a fun and easy dish that is simply gourmet.
