Today I am frying squash like they would in the deep south. Typically they use a corn meal batter, but I am using flour. I am also turning this simple dish gourmet with an easy basil dipping sauce, oh yeah…Who knew fried squash could be so awesome? 😉
Fried Yellow Squash
- 4 yellow squash
- vegetable oil
- onion powder
Basil Dipping Sauce
- 1/4 cup of mayo
- 2 teaspoons ketchup
- 1/2 teaspoon of fresh basil sliced
- 3-4 shakes of tabasco sauce
First heat up your oil to 350 degrees in a fry pan. While that is heating up slice down your yellow squash into 1/8″ thick slices tossing the stems. Season lightly with salt. In a bag of flour throw in the sliced squash. Make sure to cover each of the slices in flour shaking off any excess.
Once the oil is hot enough add your squash slices working in small batches. Cook for about 3 minutes on each side until a nice golden brown. Spoon onto a plate lined with paper towels. Season once more with salt and a little bit of onion powder.
While those are cooling prepare your dipping sauce. Combine all of the ingredients together and garnish with fresh basil.
