A Grilled Squash Salad w/Asian Pear, Brie, and a Maple Dressing…

Grilled Squash Salad

  • Acorn squash
  • Butter lettuce
  • Apple pears
  • Sliced Brie
  • Sliced Shallots
  • 2 tablespoons melted butter
  • 1 tablespoon brown sugar

Maple Dressing

  • 1/4 cup mayonnaise
  • 1/4 cup pure maple syrup (Grade A or B)
  • 3 teaspoons apple cider vinegar
  • 1/2 teaspoon sesame oil

Asian pears or apple pears are a cousin of the pear family. They look like apples, but are yellow in color. They sell them at most grocery stores. I slice them down long ways into circles about 1/8″ thick for easy grilling.

This is such a simple salad to make. To prepare the acorn squash cut in half long ways and remove the seeds. Than take each half and place onto a cutting board face down. Thinly slice creating flower like slices.

Next, heat up a tablespoon of butter with a teaspoon of brown sugar. Brush this mixture onto the squash and pear. Using either a grill pan or an out-door grill, heat on high for several minutes so it is nice and hot. Place the slices onto a dry pan or grill to create those beautiful grill marks.

Tip: You can purchase a high quality grill pan at your local TJ Maxx for half the price ($18). These are awesome for burgers, steaks, or veggies. 🙂

While those are grilling it’s time to prepare the salad. I used butter lettuce which is a lighter lettuce that is becoming more popular, but you could substitute with spinach leaves or baby arugala. Place the shallots on top. Than slice down a wedge of brie long ways with the diagonal to create a strip. Cut in half. Place 4 halves around the plate.

Next layer on the caramelized grilled squash and pear…

For the maple dressing combine all the ingredients together in a blender. Pulse for about 10 seconds or so…

Pour over top of the salad…

Top with pecans or dried cranberries to complete the festive look. 🙂
