Day 6 – Baked Parmesan Butternut Squash served over Orzo Pasta…

This dish is perfect for those cold winter days and is super easy. You just bake the squash with some garlic, heavy cream, brown sugar, and parmesan. When it’s done you gently stir into orzo pasta. It is buttery tasting and creamy topped with fresh basil and parmesan. 🙂

Note: Orzo is a tiny rice shaped pasta you can find next to the other dried pasta’s. It is perfect for a dish like this because it absorbs the flavors beautifully.

The ratio for this recipe is one cup of diced and peeled butternut squash to a 1/2 cup of dried orzo pasta for a single serving. I found these cute ramekins that fit one portion perfectly. 🙂

Baked Parmesan Squash over Orzo (1 Serving)

  • 1 cup of butternut squash peeled and cubed (quick demo)
  • 1/4 cup heavy whipping cream
  • 1-1/2 teaspoons brown sugar
  • 1 small garlic clove chopped
  • fresh grated parmesan cheese
  • 1/2 cup of dried orzo pasta

Garnish

  • 2 teaspoons fresh basil leaves chopped
  • fresh grated parmesan cheese
  • tiny bit of salt

Place the butternut squash into a small baking dish. Pour in heavy cream and lightly season with salt. Add the garlic, brown sugar, and grate some fresh parmesan cheese over top. All the ingredients will melt down and cook together in the oven.

Put in a preheated 350 degree oven for 45 min. When the squash is ready take out of the oven and let cool. 🙂

Cook the orzo pasta about 5 minutes before the squash is ready. Next drain the pasta and place into a serving bowl. Add the cooked squash mixture to the orzo and gently stir. Lightly salt and grate parmesan cheese on top. Garnish with fresh basil, perfect!
