Cheesy Chicken and Broccoli – Baked Cheez-It Crusted Chicken with a Creamy Cheese Sauce

I have been having major cheese cravings this week, plus it’s what I have in the fridge. So today I am making Cheez-It crusted chicken served with a creamy cheese sauce. The great thing about baking chicken is that’s it’s really hard to mess up. Even if you cook it a little long the inside still stays moist and juicy, perfect! 🙂

Cheesy Chicken & Broccoli (Cook Time: 20 min.)

  • Chicken breast
  • Broccoli
  • Cheez-It’s
  • Butter
  • Whipping Cream
  • Garlic
  • Shredded Sharp Cheddar
  • Salt

To begin, boil some water for the broccoli. Chop your broccoli into lovely little florets. The cheese sauce will be poured over top of these little guys as well. 😉

Pre-heat the oven to 450 degrees.

Next we are going to melt some butter in a small pot on low heat. Figure about a tablespoon per chicken breast. To the butter we are going to add a smashed whole garlic clove. To smash the garlic take your chopping knife and press it against the clove hitting the knife gently with your fist. Then just pop it into the butter.

Once the water is boiled add your broccoli for 10 minutes.

While the butter is melting place some Cheez-its into a baggie. You will need about a cup for every piece of chicken. Gently smash with a hammer or a rolling-pin will do.

Put the crushed Cheez-It’s onto a plate. Once the butter is melted pour into a shallow bowl.

Next you will want to line a baking tray with tin foil. Coat your chicken breast in the butter than dip in the cheez-it’s. Place on the baking tray and pop in the oven for 12-15 minutes.

Strain your broccoli after 10 minutes and put in a bowl. Add a dab of butter and season lightly with salt. Gently toss and cover with a piece of foil to keep warm.

In the same pot you melted the butter add a half tablespoon of butter and another smashed garlic clove. Add a half a cup of whipping cream for every serving of chicken. Bring to a slight boil. Reduce down and add equal parts shredded cheddar cheese. Lightly season with salt and stir until smooth. Keep on low heat.

Once the chicken is a nice orange, golden brown color take out of the oven. Let it rest on the baking tray for several minutes without cutting into it. Trust me it will be done.

Place the cooked chicken breast onto a plate along with a helping of broccoli. Spoon the cheese sauce over top of the entire dish. Freshly crack some black pepper and serve. Tobasco sauce is amazing with this by the way…
