There are so many types of hummus now available at the grocery store and I recently discovered this kick ass 3 layer hummus at Trader Joe’s. It is a combination of traditional, cilantro jalopeno, and spicy ~ amazing!
I love to heat up flat bread in the oven so that is nice and hot and then I spread on a layer of this hummus. If you don’t have a Trader Joe’s around you, see if you can find a cilantro hummus, or you can just add fresh cilantro to regular hummus.
I topped it with my dad’s simple tomato salad.
- diced tomatoes (on the vine)
- red onion (optional)
- sea salt
- fresh ground pepper
- 1/4 teaspoon olive oil
- splash of red wine vinegar
- shake of onion powder
Dice a couple of organic heirloom tomatoes. Sprinkle with sea salt, black pepper, and onion powder. Add a splash of red wine vinegar and olive oil. Gently stir and spoon over top. I added some diced pepperocini’s for a kick, and this snack turned into a delicious and s-a-t-i-s-f-y-i-n-g meal. The cilantro is what makes it. Healthy and affordable – is what I promised…
