Pumpkin Ravioli’s

I love pumpkin ravioli’s and I found some fresh one’s in the cold section next to the cold cuts at Trader Joe’s.  All you have to do is boil them and you have a fast gourmet meal.

You can always serve them with a brown butter sauce and fresh sage, but today I am going to dress them up with some sautéed apple, onion, and dried cranberries. I finish them off with fresh arugula and crushed ginger snaps. Let’s begin, shall we? 😉

Amy’s Jazzy Pumpkin Ravioli’s

  • pumkin ravioli’s
  • sliced onion
  • chopped apple
  • dried cranberries
  • 1-1/2 teaspoons brown sugar
  • ginger snaps
  • baby arugula
  • 2-3 tablespoons butter

In a fry pan add a tablespoon of butter. Sauté some sliced onion, apple, and dried cranberries. Add a teaspoon of brown sugar and stir on medium heat until fragrant. Add in the ravioli’s and cook until the onion and apple is golden brown. Add 2 tablespoons of butter along with a half teaspoon of brown sugar. Put in a handful of baby arugula to brighten the dish. Gently toss in the butter sauce and top with crushed ginger cookies or candied pecans.
