Artichoke Pasta with Garlic, Parmesan, and Wisconsin Cheddar…

Lordie Lord, this pasta is amazing! It’s so delicious and SO easy to make. Grab a glass of red wine and get groovy in the kitchen. 😉

Ingredients (Servings 2)

  • can of plain artichoke hearts
  • (4 oz) whole grain elbow pasta
  • 5 cloves garlic
  • olive oil
  • butter
  • onion
  • red pepper flakes
  • fresh parmesan (wedge)
  • Wisconsin cheddar (wedge)

While your pasta is cooking chop up your artichoke hearts, garlic, and onion.

In a large pan heat up a tablespoon of butter and 1/2 tablespoon olive oil. Toss in everything.

Saute on medium until golden brown (5-7 minutes).

In the meantime drain your pasta. Once your mixture is golden brown add in a tablespoon of butter and lightly season with salt.

Add in the pasta and drizzle in about 2 tablespoons of good olive oil. Re-season and sprinkle in the red pepper flakes, gently mixing.

Grate in some parmesan and the white cheddar. Toss to coat.

This dish melts in your mouth – who knew Wisconsin cheddar would be so good with artichokes?!

To serve grate fresh cheddar over top. 😉
