Some people go to yoga and eat healthy afterward, but I on the other hand choose to make a blueberry pie. I found this recipe online and I made a few shortcuts with the crust. It’s simple, easy, and in my opinion everyone needs a slice of blueberry pie! ♥

Country Blueberry Pie
- 3/4 cup sugar
- 2 tablespoons cornstarch
- 1/2 teaspoon ground cinnamon
- 1/2 cup water
- 3 cups blueberries (frozen or fresh)
- 1 tablespoon fresh lemon juice
- 2 pie crusts
Filling: Combine sugar, cornstarch, cinnamon and water. Add to a saucepan and heat rapidly until thickened. This smells like cinnamon goodness…
Set aside to cool as you prepare the pastry. Once cooled add the berries and lemon juice.
Preheat oven to 425 degrees F.
Pour filling into dough lined pie pan, and sprinkle the lemon juice over the filling.
For the lattice top, take the extra pie crust and place it on a cutting board with a little bit of flour on top. Place a piece of wax paper over top and roll it out.
Cut into 1/2″ strips and place them on the pie starting with the longest strip in the middle. Make sure you skip every other strip so when you go the opposite direction, you begin with the 2nd longest strip. 🙂
Sprinkle the top lightly with sugar. Place the pie onto a baking sheet and put into the oven for 20 minutes. Reduce heat to 350 degrees F and bake for an additional 20 to 25 minutes. If the edges start to brown cover with some foil. My Aunt Marie taught me that one. 😉
Allow the pie to cool and serve with your favorite ice cream or whip topping!
