This might just be one of my favorite creations! I went to Paris once and I had a caprese salad served with fig instead of tomato and it was amazing. I took that same sweet concept to the next level serving fresh mozzarella with grilled apples, caramelized onion, and a balsamic reduction. It is decadent and absolutely divine! Though it may sound complicated, it is quite simply gourmet.
Amy’s Sweet & Savory Caprese Salad (Servings: 2)
Time: 2o minutes
- 1/2 sweet onion sliced
- 1 tablespoon butter
- 1/2 teaspoon grade A maple syrup (substitute brown sugar)
- apple sliced in rounds (3 per salad)
- fresh mozzarella
- aged balsamic vinegar
- olive oil
- salt & pepper
First slice your onion in half. Then placing it on it’s side slice down. Heat up some butter into a sauce pan and place the onion in.
Cook down until the onion turns a golden brown. Add in the maple syrup, turning the heat on medium low and keep slowly cooking them until they turn a deep caramel color.
In the meantime heat up some butter in a grill pan and begin placing in the apple slices.
You are almost ready to begin making your caprese stacks, but first you need to create your balsamic reduction. It sounds super fancy, but it couldn’t be easier. In a sauce pan add a little bit of balsamic vinegar and cook on low until it reduces down to syrup – about 5 min.
Time to start the first layer.
Place a slice of fresh mozzarella on a plate. Drizzle with a little olive oil and sprinkle lightly with salt and pepper.
Next you are going to add a sweet layer of a grilled apple round and a spoonful of caramelized onion.
Continue layering until you have 3 tiers of apple and onion.
Lastly, spoon a tiny bit of the fancy balsamic reduction. Now how easy was that? My mouth is watering posting these pics again. I hope you enjoy this beautiful salad.
