My Lil’ Garlic Potato Cakes

There is nothing more easy than these bite-sized potato cakes. They are super tasty and have only have 4 ingredients.

Garlic Potato Pancakes (Serves 2)

  • 2 white potatoes
  • 1 teaspoon of cornstarch
  • 1 clove of garlic
  • 2 teaspoons mayo

We are doing this the old fashioned way and using just a regular grater. It takes a little extra time, but it’s well worth it. Pototoes have a lot of moisture so keep rotating them in different directions so they don’t slip.

Once you are done grating the potatoes it’s important you squeeze most of the water out of them. You can use a cheese cloth or strainer. Next grate into the potatoes a clove of garlic. Add a teaspoons of cornstarch and a little bit of mayo to bind the mixture together.

In a fry pan add in a couple tablespoons of butter, laying them gently in the pan. Continue pressing them down on each side with a spatula so the inside cooks all the way. (Cook time: 15 minutes).

Once they are golden brown sprinkle with salt and eat ’em on up!  If you want to add a simple sauce, combine mayo with a little bit of sriracha. Place a dollop on each potato cake. 🙂
