Since I just got back from wine country I thought it would be perfect to reblog this amazing salad that’s perfect for this time of year! Enjoy. 🙂

This is an amazing salad that reminds me of Napa Valley.  It has rich, earthy flavors with fig and blue cheese crumbles, complimented by buttery slices of avocado, topped with a honey dressing.  A perfect lunch served with a glass of red wine. 🙂

Amy’s Napa Valley Salad (Servings 1)

  • 4 dried figs sliced
  • spinach leaves
  • Danish blue cheese crumbled
  • onion sliced
  • 1/2 avocado sliced
  • salt & cracked pepper

Honey Dressing

  • 2 tablespoons of olive oil
  • 2-3 teaspoons of red wine vinegar
  • 1/4 teaspoon of honey

In a small pan grill up a little bit of onion.

Whisk together your dressing and slice up the figs and avocado. To prepare the avocado, I cut in half scooping out one side with a spoon. I place the half face-down onto a cutting board and thinly slice vertically.
