Hi Everyone, It’s that time of the year again and I love SQUASH! You can purchase butternut squash pre-chopped for just a couple bucks (Trader Joe’s) which cuts down on your prep time and budget. We are going to roast it in a 350 degree oven with some butter and maple syrup for 20 minutes.
Amy’s Simple Squash (1-2 Servings)
- pre-chopped Squash
- 2 tablespoons chopped butter
- 3 tablespoons Grade A Maple Syrup
- grated nutmeg
- pinch of salt
- 1/2 teaspoon of sugar
- medium to hard cow’s milk cheese
Pre-heat your oven to 350 degrees. In a loaf pan add in the squash. Place the sliced butter over top. Pour over the maple syrup. Grate fresh nutmeg and season lightly with salt. Place in the oven for about 20 minutes and that’s all – couldn’t be simpler.
I found this amazing truffle cheese for $4.00 that we are going to grate over top when the squash is done (Trader Joe’s). You can use any cow’s milk cheese, pecorino or parmesan – it’s up to you!
Tip: When it comes to purchasing cheese don’t get deterred by the price in front of the cheese. It’s usually priced by the pound so when it says $11.49 that is not for the individual wedges. Look at the back of the cheeses for the actual price.
Once the squash is cooked, using a slotted spoon place into a bowl. Add a half teaspoon of sugar to the remaining juices. Stir, and pour over top. Grate your favorite cheese over top.
A great pairing for squash is sausage. I found this spicy Italian chicken sausage that is absolutely perfect! Serve right alongside the squash for a beautiful Fall spread.
