Here is a simple and fantastic recipe for a baked omelet. This is great to make in advance for your family when you want a ready-to-go egg breakfast.
Ingredients – Cook Time: 35 minutes
- 8 eggs (Beaten)
- 1 cup half n’ half
- pinch of salt
- black pepper
- onion powder
- 1 onion sliced
- 1 bell pepper sliced
- 1 potato sliced
- pinch of chili powder
- fresh parmesan for garnish
In a sauté pan add some butter and cook the potatoes, onion and pepper in separate batches, seasoning lightly with salt and place aside. In the bottom of a greased casserole dish layer the cooked sliced potatoes. Next add a layer of the sautéed onion and bell peppers.
In a separate bowl whisk together the eggs and half n’ half. Season with a pinch of salt, black pepper, a few good shakes of onion powder and some chili powder for some kick! Pour over the vegetables and place in a 350 degree preheated oven for 35 minutes. Garnish with fresh parmesan cheese. 🙂
