This is the perfect winter salad because kale is a hardy green that sticks to your bones and beets are packed full of iron. The citrus orange dressing really brightens the flavors and brings together the creamy brie and tart green apple. You body will feel great after you eat this salad and your mouth will be happy too. 🙂
– 2 cups chopped kale
– 1 fresh beet
– 1 orange
– brie triangle (slice lengthwise and cut into bite-sized pieces)
– Granny Smith apple (chopped)
– 2-3 tablespoons olive oil
– 1 tablespoon champagne or apple cider vinegar
– salt & pepper
– onion powder
I chose to use fresh beets, but that is up to you. If you are using fresh ones just chop off the stems and wash the bulbs. Place into some foil and cook in a 375 degree oven for about 30-40 min. until soft. Place in the fridge and when you are ready to use peel the skin and dice.
In a medium sized bowl layer the kale, beets, brie, and apple. Season with salt/pepper and onion powder. Squeeze the entire orange over the salad. The bursts of freshness that will come from the sweet orange will round out the beets and apple. Add in a couple teaspoons of olive oil and about a tablespoon of vinegar. Let the kale soak up the juices for a moment. Gently toss and serve.
