There is nothing like an old fashioned onion dip, but today I’m making it a little healthy. I added some kale and baby spinach along with some low fat sour cream. Serve with some sweet potato chips or kettle corn chips with a medley of fresh vegetables from the garden. Your guests will be amazed and you will be even happier at how easy it is to make!
Sweet Onion & Kale Dip
1 tablespoon salted butter
1 cup chopped sweet yellow onion (about 1/2 onion)
1/2 cup fresh kale baby spinach, chopped
1/2 cup baby spinach, chopped
dash of Worcestershire sauce
2 tablespoons mayo
1 -1/2 cups low fat cream
2 tablespoons chopped fresh chives
Potato chips and medley of veggies like carrots, cucumbers, and radishes.
Saute the chopped onion in the butter until golden brown and then add in the greens for another minute. Place mixture into large bowl and add in the remaining ingredients. Salt to taste (careful if you are serving with salty chips). Garnish with some black pepper and chives. Place in the fridge for a couple of hours until chilled.
Create a fun tray by lining a shallow basket or tray with paper, then add all your dippers. Enjoy! 🙂
