Spring Pea Puree

This is such an easy recipe to whip up in a pinch. It’s fresh, sweet and the perfect Spring appetizer. The secret ingredient? Frozen peas and they don’t need to be defrosted either. You can even add some fresh mint or basil from the garden. 🙂

Spring Pea Puree

  • 2 cups frozen peas
  • clove minced garlic
  • 1/4-1/2 cup olive oil (drizzled slowly in)
  • 1/4 cup grated parmesan
  • 2 tablespoons fresh lemon juice
  • 1/4 teaspoon salt
  • toasted bread
  • optional mint or basil

This recipe is very flexible so feel free to make your own. To a food processor add the garlic clove and chop. Next, add the frozen peas and begin streaming in the olive oil. Gently pulse the food processor pausing every few seconds until the peas start breaking down. The olive oil will actually begin defrosting the peas.

You can add as much olive oil as you like depending on how chunky you want the puree to be. I personally like some of the sweeter larger bites of peas, but it’s up to you. Squeeze in some fresh lemon and if you have some mint or basil on hand add that too. Pulse again and than mix in some parmesan cheese. Salt to taste. Top with some freshly grated parmesan and place on top of toasted bread slices or a crostini.Photo Apr 03, 8 38 43 PM
