Okay, so I didn’t get all fancy and purchase a wheel of brie. I decided to change it up since it was just for two people and I used a triangle of brie creating sort of like, ummm…a brie calzone. Let’s just call it the Beastly Brie – because I think it earned the name and is one of best things I’ve ever eaten. My boyfriend agrees.
Amy’s Beastly Brie
– 3 Tablespoons Apricot Preserves
– 2 Tablespoons Brown Sugar
– 1 Tablespoon Butter
– 1 Frozen Puff Pastry Sheet (Defrosted 10-15 min.)
– 1 Beaten egg
Preheat your oven to 375 degrees. On a non-stick pan or piece of parchment paper like I used, layout a single sheet of puff pastry. Slice off the white top and bottom of the brie. Warning – this may explode in the oven.
Place the brie triangle on top and add on all your fun ingredients – butter, brown sugar, & apricot preserves. (This is my favorite part.)
Wrap up your brie so it looks like a Stromboli. Brush lightly with the beaten egg and place in the oven for 20 minutes or until golden brown.
I told you it might explode, but don’t fret. Cool for about 60 seconds and with a spatula move the beastly brie to to a lovely dish. 🙂
Serve with an array of sliced apples and toasted French bread.
This amazing creation with it’s ooohy goodness of warm apricot preserves and creamy brie melts in your mouth. It is perfectly paired with a glass of your favorite red wine.
